The almond essence with raspberry jam and the crusty sugar topping was like nothing I\u2019d ever tasted before.<\/p>\n<h3 style=\"color: #00426a;\">Makes 12<\/h3>\n<h2 style=\"color: #00426a;\">Ingredients<\/h2>\n<h4>Pastry<\/h4>\n<ul>\n<li>230g plain flour<\/li>\n<li>20g icing sugar<\/li>\n<li>130g salted butter<\/li>\n<li>1 egg, beaten<\/li>\n<li>2 tablespoons water<\/li>\n<\/ul>\n<h4>Filling<\/h4>\n<ul>\n<li>Raspberry jam<\/li>\n<\/ul>\n<h4>Topping<\/h4>\n<ul>\n<li>100g ground almonds<\/li>\n<li>3 egg whites<\/li>\n<li>1 teaspoon almond essence<\/li>\n<li>170g caster sugar<\/li>\n<\/ul>\n<h2 style=\"color: #00426a;\">Method<\/h2>\n<ol>\n<li>Preheat the oven to 180\u00b0C (fan).<\/li>\n<li><strong>Make the pastry:<\/strong> In a large bowl, mix the flour and icing sugar. Rub in the butter until the mixture resembles breadcrumbs. Add the egg and water, then mix into a dough. Wrap in clingfilm and chill in the fridge for at least 1 hour.<\/li>\n<li><img decoding=\"async\" src=\"https:\/\/cornishcookingclub.com\/wp-content\/uploads\/2025\/07\/jam.jpg\" alt=\"Raspberry Jam\" style=\"width: 100%; border-radius: 12px; margin: 20px 0;\"><\/li>\n<li><strong>Make the topping:<\/strong> Whisk the egg whites until they form soft peaks (don\u2019t overbeat). Gently fold in the sugar, ground almonds, and almond essence. Whisk again until fully combined.<\/li>\n<li><img decoding=\"async\" src=\"https:\/\/cornishcookingclub.com\/wp-content\/uploads\/2025\/07\/whisk.jpg\" alt=\"Whisking Topping\" style=\"width: 100%; border-radius: 12px; margin: 20px 0;\"><\/li>\n<li>Grease a 12-hole bun tray.<\/li>\n<li>On a floured surface, roll out the chilled pastry to around \u00bd cm thick. Cut 12 round bases with a pastry cutter.<\/li>\n<li>Place the pastry rounds into the bun tray.
